Ingredients:

  • 4 cups fresh broccoli florets (chopped)

  • ½ cup shredded carrots

  • ½ cup red cabbage (thinly sliced)

  • ¼ cup red onion (finely diced)

  • ½ cup sunflower seeds (or slivered almonds)

  • ½ cup dried cranberries (unsweetened)

Dressing:

  • ½ cup dairy-free mayo (or tahini for a nutty twist)

  • 1 tbsp apple cider vinegar

  • 1 tbsp maple syrup (or agave)

  • ½ tsp garlic powder

  • ½ tsp salt

  • ¼ tsp black pepper

Instructions:

  1. In a large bowl, combine broccoli, carrots, cabbage, onion, sunflower seeds, and cranberries.

  2. In a small bowl, whisk together the dressing ingredients until smooth.

  3. Pour the dressing over the salad and toss well to coat.
