Wholesome Veggie Quiche with Sweet Potato Base

Ingredients:

For the Sweet Potato Crust:

  • 2 medium-sized sweet potatoes, peeled and grated
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)

For the Quiche Filling:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables (such as bell peppers, spinach, mushrooms, zucchini), chopped
  • 6 large eggs
  • 1/2 cup milk or non-dairy alternative (almond milk, coconut milk, etc.)
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • Salt and pepper to taste
  • 1 teaspoon dried herbs (such as thyme, oregano, or herbs of your choice)

Instructions:

1. Preheat the oven:

  • Preheat the oven to 375°F (190°C).

2. Make the Sweet Potato Crust:

  1. Place the grated sweet potatoes in a clean kitchen towel and squeeze out any excess moisture.
  2. In a bowl, combine the sweet potatoes with olive oil, salt, pepper, and paprika (if using).
  3. Press the sweet potato mixture into the bottom and up the sides of a greased pie dish to form the crust.
  4. Bake the crust for about 20-25 minutes until the edges start to brown slightly.

3. Prepare the Quiche Filling:

  1. In a skillet, heat olive oil over medium heat. Sauté the diced onion and minced garlic until softened.
  2. Add the mixed vegetables and cook until they are tender. Remove from heat.

4. Assemble the Quiche:

  1. In a mixing bowl, beat the eggs and whisk in the milk.
  2. Stir in the cooked vegetables, shredded cheese, dried herbs, salt, and pepper.
  3. Pour the mixture into the pre-baked sweet potato crust.

5. Bake the Quiche:

  1. Place the quiche in the oven and bake for about 30-35 minutes or until the center is set and the top is lightly golden.
  2. Once done, remove from the oven and let it cool for a few minutes before slicing.

6. Serve and Enjoy:

  • Slice the quiche into portions and serve warm. It's delicious both freshly baked and at room temperature.
