Ingredients:

  • 1 cup freekeh
  • 1 cup frozen lima beans
  • 1 large orange (for juice and zest)
  • 2 tbsp fresh mint, chopped
  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp honey or maple syrup (optional, for sweetness)
  • Salt and pepper to taste

Instructions:

  1. Cook Freekeh: Rinse the freekeh under cold water. In a pot, bring 2 cups of water to a boil, then add the freekeh. Reduce heat to low, cover, and simmer for about 25-30 minutes, or until tender. Drain and let cool.
