Chocolate Peanut Butter Banana Loaf

The combo of Chocolate and Peanut Butter come together beautifully in this loaf to make a tasty mid afternoon treat or dessert! With an almost brownie like texture, this loaf will become one of your favourite dairy free/gluten free & plant based desserts!

Ingredients:

  • 3/4 cup natural peanut butter
  • 2 ripe bananas, mashed
  • 2 tbsp quinoa flour
  • 2 flax eggs *see below for how to make flax eggs
  • 1/2 tsp baking powder
  • 2 tbsp cocoa powder
  • Generous handful of 70% dark chocolate chunks

*Flax eggs: Mix together 1 tbsp ground flax seed plus 3 tbsp of water. Mix together and let sit in the fridge for 10-15 minutes to thicken.

Method:

1. Preheat oven to 350 degrees. 

2. Make flax eggs by mixing together ground flax and water. Put in fridge to set for 10-15 minutes.

3. Mash bananas in medium sized bowl. 

4. Next, add in the peanut butter, quinoa flour, flax eggs, baking powder, baking powder and chocolate chunks and mix together.

5. Pour mixture into a loaf baking tray line with parchment paper.

6. Bake for 30 minutes. Let the loaf cool before slicing!
