Coconut & Mango Chia Seed Pudding

Coconut and mangoes come together in this refreshing and healthy dessert! This Chia Seed Pudding has just the right amount of creaminess from the coconut milk and sweetness from the maple syrup. Chia seeds are amazingly fiber rich and full of omega-3's! This is one of my favourite ways to enjoy Chia Seed Pudding! 

Ingredients:

  • 1 can of lite coconut millk (full fat coconut milk will work as well)
  • 1/3 cup of chia seeds
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla
  • Sprinkling of unsweetened coconut for topping

Method:

1) In a medium bowl, whisk together the coconut milk, chia seeds, maple syrup and vanilla. Let sit on the counter for 10 minutes and whisk again once more before putting in the fridge to set. 

2) Cover the bowl and let the chia seed pudding set in the fridge. The longer it sits, the more it will gel up. Ideally around 4 hours or even overnight is best to get a thick and creamy chia seed pudding. 

3) Once ready to enjoy, layer your chia seed pudding with fresh or frozen thawed out mangos. You can also sprinkle some unsweetened coconut on top!
