Dark Chocolate Pudding Parfait

It is hard to believe that this rich and decadent Dark Chocolate Pudding Parfait is refined sugar free and dairy free! The pudding base and parfait topping use minimal ingredients and when combined together make for a irresistible dessert! This one will be enjoyed by both adults and kids alike - my kids couldn't get enough of it!

Serves 4-6

Ingredients:

Pudding:

  • 1 can of coconut cream
  • 1/2 cup of unsweetened cocoa powder
  • 6 tbsp pure maple syrup (can add another 1-2 tbsp if wanting extra sweet)
  • 1 tsp vanilla extract
  • pinch of sea salt

Parfait Topping:

  • 5 pitted medjool dates
  • 1/4 cup rolled oats
  • 1 tsp unsweetened cocoa powder
  • 2 tsp coconut oil

Method:

1. In a small saucepan, combine can of coconut milk, cocoa powder and maple syrup over low-medium heat. Whisk continuously being sure to smooth out any chunks.

2. Continue to heat until combined and the mixture becomes smoothy and silky. Once the mixture starts to come to a boil, you may remove from the heat and stir in the vanilla and salt.

3. Cover and refrigerate until set. Give approximately 4 hours for it to set or even better to leave overnight!

4. Next, make up the topping to have ready to go for when the pudding is set. In a food processor, add together the dates, oats, cocoa powder and oil. Place in a container aside to add onto the pudding later. Sprinkle on any additional toppings like coconut or almond slivers! Enjoy!
