Maple Pecan Granola

This Maple Pecan Granola makes a huge batch and doesn't need many ingredients! Simple and delicious! Some favourite ways to use it are as a topping on coconut yogurt or smoothie bowls! How do you like to enjoy your granola?

Ingredients:

  • 2 1/4 cup oats
  • 1 cup almond flour
  • 1 cup pecan, chopped into pieces
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil, melted
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger

 optional: coconut flakes, dried apples

 Method:

1. Preheat oven to 350 degrees. Mix all ingredients together in a medium sized bowl and stir well.

2. Spread out the granola on a baking sheet in an even layer about an inch thick. Bake for 15 minutes and then remove and using a spatula flip the granola around on the pan and put back in the oven for another 10 minutes.

3. Remove once more and flip the granola around. You should start to see some pieces browning. Put back in for another 5-10 minutes. Keep a good eye on it so it does not burn!

4. Granola can be stored in mason jars or a container for 3-5 days.
