No Bake Chocolate Coconut Macaroon Bites

These Chocolate Coconut Macaroons come together so quickly just just a few simple ingredients. They require no baking so you can be enjoying them in no time! They taste best chilled and can be eaten straight from the freezer or fridge. If you are a coconut lover, these are sure to become a staple in your dessert rotation! 

Makes 10

Ingredients:

  • 1 cup unsweetened coconut 
  • 1/4 cup unsweetened cocoa
  • 3 tbsp almond flour
  • 1/4 cup maple syrup
  • 1 tbsp melted coconut oil
  • 1/4 tsp sea salt (optional)

Other optional mix-ins: hemp seeds, chia seeds, etc

Method:

1. In a medium bowl, mix together the coconut, cocoa, almond flour, maple syrup and coconut oil. Sprinkle in some sea salt if you like the sweet and salty combination. If you are choosing to add in more mix ins to make these more of an energy ball, you can do so at this time.

2. Chill the dough for around 10 minutes so that it is easier to work with to make into balls.

3. Once chilled, form balls with the dough and place them on a parchment lined baking sheet in the freezer for around 15-20 minutes so that they set.

4. They are now ready to eat! Store these Chocolate Coconut Macaroon Bites in the fridge or freezer in a container. Enjoy!
