Summer Fresh Salad
Ready to change up your salad ideas? Here's a fun one with a killer balance of sweet and savoury.
Serves 2
Ingredients:
- 1 cup beets, julienne cut
- 1 cup carrots, julienne cut
- 1 cup shredded cabbage
- 1 green apple, chopped
- 1 cup baby spinach
- 1 cup cooked black beans, rinsed and drained
Dressing:
- 2 tbsp tamari
- 1 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1/2 tsp dijon

Method:
- Combine all the ingredients in a bowl.
- In a magic bullet combine the ingredients for the dressing. Blend until smooth.
- Mix together and serve immediately. If you plan on meal prepping, prepare the dressing same day and mix together at meal time.
