Summer Fresh Salad

Ready to change up your salad ideas?  Here's a fun one with a killer balance of sweet and savoury. 

Serves 2

Ingredients:

  • 1 cup beets, julienne cut
  • 1 cup carrots, julienne cut
  • 1 cup shredded cabbage
  • 1 green apple, chopped
  • 1 cup baby spinach
  • 1 cup cooked black beans, rinsed and drained

Dressing:

  • 2 tbsp tamari
  • 1 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1/2 tsp dijon

Method:

  1. Combine all the ingredients in a bowl.
  2. In a magic bullet combine the ingredients for the dressing.  Blend until smooth.  
  3. Mix together and serve immediately.  If you plan on meal prepping, prepare the dressing same day and mix together at meal time.
