Vegan Bliss: Chocolate Peanut Butter Cups

Ingredients:

For the Peanut Butter Filling:

  • 1/2 cup creamy peanut butter (make sure it's vegan)
  • 2 tablespoons maple syrup or agave nectar
  • 2 tablespoons coconut flour (or almond flour)
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

For the Chocolate Coating:

  • 1 cup dairy-free chocolate chips
  • 1 tablespoon coconut oil

Instructions:

  1. Prepare the Peanut Butter Filling:

    • In a mixing bowl, combine the peanut butter, maple syrup (or agave nectar), coconut flour, vanilla extract, and a pinch of salt.
    • Mix until the ingredients are well combined. The mixture should be thick and easy to handle. If it's too thin, add a bit more coconut flour.
  2. Shape the Peanut Butter Filling:

    • Line a mini muffin tin with paper liners.
    • Take small portions of the peanut butter mixture and roll them into small balls. Flatten each ball slightly and place them into the muffin tin. You should have enough to make about 12 peanut butter cups.
  3. Prepare the Chocolate Coating:

    • In a microwave-safe bowl or using a double boiler, melt the dairy-free chocolate chips and coconut oil together. If using the microwave, heat in 20-second increments, stirring between each increment until the chocolate is smooth.
  4. Assemble the Peanut Butter Cups:

    • Spoon the melted chocolate mixture over each peanut butter-filled cup, covering the filling completely.
    • Use a spoon to smooth out the tops.
  5. Chill and Set:

    • Place the muffin tin in the refrigerator for at least 30 minutes, or until the chocolate has hardened.
  6. Serve:

    • Once the chocolate has set, remove the peanut butter cups from the muffin tin.

Store any leftovers in an airtight container in the refrigerator. These treats make for a delicious and satisfying vegan dessert or snack.
