This Zucchini & Carrot salad is a great way to add more raw vegetables into your meals. It is packed with quinoa and is finished off with a delicious sesame ginger dressing!
1. Spiralize the zucchini, carrots and bell pepper or cut into thin pieces.
2. Cook quinoa according to cooking instructions. Set aside to cool.
3. Mix together sesame oil, ginger and garlic and lime juice to make the dressing.
4. Toss together the vegetables and quinoa in a bowl and pour the dressing over to coat. Serve cold.
